dp spotlight sf Recipe: Smoked Ham Quiche
Easter or not, this quiche is delicious and perfect for the next brunch you want to impress!
It's very fluffy, incredibly savoury and made extra delicious by the diced smoked ham from pasture raised, heritage breed pork.

INGREDIENTS:
Servings: 4 - 5
1 frozen pie crust (even better if you make your own!)
~1 lb heritage breed smoked ham, diced (if your ham is larger, you can use the leftovers in other dishes!). You can also use sliced pieces of bacon!
6 eggs
1 cup heavy cream
3/4 cup milk
1 small onion, diced
1 cup your favourite hard cheese, grated
2 tbsp butter
Pinch cayenne pepper
Pinch nutmeg
1 tsp kosher salt
1/2 tsp ground pepper
PREPARATION:
STEP 1
Parbake your pie crust (or prepare your pie crust if making on your own!). When done, preheat oven to 425 deg F.
STEP 2
In a saucepan on medium, melt butter and sauté onion until almost caramelized. Add the ham and sauté for another minute.
STEP 3
In a large bowl, whisk together the eggs, whole milk, heavy cream, salt, pepper, cayenne & nutmeg.
Layer 3/4 of your cheese at the base of the pie shell, pour all your onion and ham in, followed by the egg mixture. Finish with your remaining cheese.
STEP 5
Bake for ~40 minutes or until the crust is golden, sides are set and the middle has a little jiggle to it. Let cool before serving.
